Makes enough for 10 servings

To make the Clementine Cordial (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Drink (yields 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, to finish

Directions

For the Cordial: Combine the listed components in a pot, heat until it reaches a light boil, agitating until the sugar dissolves. Next, take off the burner and leave to reach room temperature entirely. Transfer into an sterilised bottle, seal and store in the fridge, it will last for up to a month.

To make Premix: Mix all the spirits and syrup into one large bottle, leave to sit for 60 minutes, then pass it through preferably using muslin, so it's fully clarified.

To serve: Measure 85ml of the premix into a mixing glass packed with ice, and stir gently for about 60 seconds to cool it down. Pour into a chilled martini glass or similar, top with the cranberries and complete it by giving it a quick spritz with the mandarin essence over the top.
